Fancy but easy yummy breakfast everyone will love! Freshly toasted bread topped with 100% peanut butter, banana & chia seeds. Served with a simple frozen blueberries, banana & 100% soy milk. YUM!
Try to use really ripe bananas with brown spots for natural sweetness; this way you won’t need to add any sweeteners. For those days you only have really yellow bananas, I like to add a few dates or agave syrup for sweetness 😉 You can find dates online here!
Simple Peanut Butter Banana toast & Blueberry Smoothie
- 2 pieces bread
- 2 sml/med banana or 1 large banana
- peanut butter
- 3/4 cup soy milk
- 1/4 cup frozen blueberries
- chia seeds
- Add one banana, blueberries & soy milk to blender and blend until smooth (or desired consistency)
- Put bread in toaster.
- Slice other banana into thin slices
- Once toast is ready, spread on peanut butter, top with banana & sprinkle with chia seeds
- Serve immediately!
Ingredients guide for Japan residents
Unfortunately vegan bread can be difficult to find in Japan, and is almost non-existent in supermarkets. I recommend researching local bakeries – occasionally you will get lucky! Quite often there will be an allergen list showing if the product contains eggs or milk, but be careful as sometimes they like to add animal lard so you need to ask!!
100% peanut butter can also be really difficult to find in Japan 🙁 However if you are lucky enough to live near a Kaldi Coffee or similar import food shop, you will be able to find the Smucker’s brand. If not, there are a few options online, including Kaldi, Amazon Japan, & iherb.
I usually get the soymilk below. It’s 100% soymilk, so no sugar or preservatives. If you are used to sweetened soymilk, then this one can take some getting used to, but I highly recommend giving it a try. I wasn’t a big fan at first, but now I love it!
