Yaki-imo or roasted Japanese sweet potatoes are naturally super sweet, melt in your mouth potatoes that are delicious on their own and packed full of nutrition.
Normally you would bake in an oven for around an hour, but for those who live in Japan most houses/apartments don’t come with an oven. But most people here own a rice cooker! (If you don’t, I highly recommend getting one!)
This simple recipe allows you to get oven-like roasted sweet potatoes and it can be achieved using your rice cooker!
Yaki-imo/Baked Japanese Sweet Potato
- rice cooker
- 2 Japanese sweet potatoes
- 1/3 cup water
- Wash sweet potatoes
- Add to rice cooker and add water
- Select the same setting you would normally cook rice in (depending on size and model this can vary from 40- 80 minutes).
- That’s it! Serve immediately. Best eaten within two days.
